Winemaking

There's no recipe.

There's no rule book.

There are some good rules to be considered

But they can be bent or broken, inscribed or ignored.

 

And the good grape changes from year-to-year.

There's no other way.

Nature doesn't do continuity.

It's constantly changing and evolving.

Grapes are just in infinitesimal part of that change,

but they change, nonetheless.

And if the grape changes, the winemaking changes and if the winemaking changes, then so must the wine.

 

If there's a rule, it's never to make the same wine twice.

 

So we don't

 

Similar, maybe, but never the same.
